Powdered Sugar: Adds sweetness to the cookies. Compared to regular granulated sugar, powdered sugar has finer particles, which dissolve more easily and creates a smoother texture.

Eggs: Add the egg mixture gradually to increase dough stickiness and elasticity, making it easier to shape. It also adds an eggy fragrance to the cookies.

Cocoa Powder: Used to make a chocolate-flavored dough, giving the cookies a unique cocoa taste and darker color.

Matcha Powder: Adds a fresh, green tea flavor to the dough and gives the cookies a vibrant green color, making the cookies richer both in flavor and appearance.

Essential Tools

Mixing Bowl: Used to mix the butter, powdered sugar, egg mixture, and flour. It’s best to use a larger, deep stainless steel or ceramic bowl to avoid spills during mixing.

Whisk: You can use either a manual or electric whisk. After mixing the butter and powdered sugar, whisk until light and fluffy, incorporating air into the mixture for a softer cookie texture.

Rolling Pin: Used to roll the dough flat and prepare it for cutting shapes. The length and thickness of the rolling pin should be moderate to make the rolling process smooth and even.

Cookie Cutters: Used to cut out your favorite shapes, such as animals or cartoon characters, making the cookies more fun and visually appealing. You can use a variety of cookie cutters for added enjoyment and variety.

Oven: Preheat to 150°C (300°F), then bake the cookies for 15 minutes. This is the essential tool for baking the cookies to perfection.

Baking Tray: Used to place the cookie dough on and put into the oven. Line the tray with parchment paper to prevent the cookies from sticking and make cleanup easier.

Parchment Paper: Used to roll out the dough, preventing it from sticking. It’s also placed on the baking tray to stop the cookies from sticking, and it helps with heat insulation to avoid burning the bottom of the cookies.

Common Mistakes to Avoid

Over-softened or Insufficiently Softened Butter:

If the butter is too soft, the cookies will spread too much while baking, affecting their shape. If it's not softened enough, it won’t mix well with the powdered sugar and other ingredients, resulting in a rough texture.

Butter should be softened to the point where a light touch from your finger leaves a mark.

Incorrect Egg Addition:

Adding the eggs too quickly or in one go can prevent the butter and egg mixture from fully combining, causing separation of oil and water, which results in uneven dough and poor cookie texture and appearance.

Freezing Time Too Long or Too Short:

If the freezing time is too short, the dough will be too soft and difficult to press into shapes with cookie cutters. If the freezing time is too long, the dough will be too hard and may crack when pressing. Typically, freezing for about 30 minutes is ideal.

Not Preheating the Oven:

If the oven is not preheated and you put the cookies in, they will expand and deform as the oven heats up, affecting their appearance.

INGREDIENTS

  • 160g cake flour
  • 70g butter (softened at room temperature)
  • 40g powdered sugar
  • 25g egg (beaten)
  • 3g cocoa powder
  • 3g matcha powder

DIRECTIONS

STEP 1

In a bowl, add 70g of softened butter and 40g of powdered sugar. Mix them together until well combined.  

Use a whisk to beat the mixture until fluffy.

Add the 25g of beaten egg in small batches, making sure to mix well after each addition before adding the next. Continue beating with the whisk until the mixture becomes light and fluffy.

Sift in 160g of cake flour and mix until combined. Then, knead the dough into a ball with your hands.

Divide the dough into three portions. Add cocoa powder to one portion and matcha powder to another, mixing each portion until fully combined.

Place parchment paper on your surface and roll out the dough. Then, chill the dough in the fridge for 30 minutes.

After the time is up, take the dough out and use cartoon-shaped cookie cutters to press out your desired designs.

Place the shaped dough on a baking tray and bake in a preheated oven at 150°C (300°F) for 15 minutes.

How Long Can the Cookies Be Stored?  

Store any leftover cookies in an airtight container at room temperature. They are best enjoyed within 3 days for optimal flavor and texture. If you choose to freeze the cookies, they can last up to 3 months.  

How to Freeze the Cookies?

Let the cookies cool completely before sealing them in a freezer bag, making sure to remove as much air as possible.  

Label the bag with the type of cookie and the date. Place it in the freezer, and enjoy within 3 months.  

To eat, remove from the freezer and let them thaw naturally at room temperature for a crispy texture.

Recipe Variations  

Fruit Flavor:
