Choosing Potatoes

It is recommended to choose starchy potatoes, such as russet potatoes or Yukon Gold potatoes. These types have higher starch content, which helps the potato slices stick together and have lower moisture content, making them ideal for pancakes and maintaining a crispy texture.

Be sure to choose potatoes with smooth skins, free from green spots or sprouting.

Peel the potatoes and slice them thinly. Rinse them under cold water to help remove excess starch, then drain and set aside.

Season the Potato Slices:  

In a large bowl, mix the sliced potatoes with 1 tsp salt, 1 tsp black pepper, 1 tsp chili powder, 1/2 cup potato starch, and 1 tbsp chopped parsley.  

The potatoes will release moisture during the marinating process, helping the potato starch naturally form a paste. If the mixture feels too dry, you can add a small amount of water to adjust.

Fry the Potato Pancake:

Preheat a frying pan and spray with a thin layer of oil.  

Arrange the seasoned potato slices in a circular shape in the pan, pressing them tightly together to form a full pancake shape.  

Cover the pan with a lid and fry on low heat for about 5 minutes, until the bottom is golden and set.

Flip and Fry Until Crispy:

Remove the lid, gently flip the pancake, spray a small amount of oil on the other side, and increase the heat to medium. Continue frying until the surface is golden and crispy.  

Once done, remove and set aside, repeating the process to make the second pancake.

Add Cheese:

Sprinkle a generous amount of mozzarella cheese evenly over the first fried potato pancake.  

Quickly place the second pancake on top and gently press them together. Cover the pan with a lid and use the residual heat to melt the cheese completely.

After 1-2 minutes, when the cheese has melted, remove the pancakes from the pan. Cut them into bite-sized pieces and serve hot.
