Oyster Mushroom Recipe

Oyster mushrooms are both beautiful and delicious! There are many ways to prepare them, but my favorite is the braised oyster mushrooms. This basic recipe for braised oyster mushrooms is quick and simple. The delicate mushrooms are first fried in oil, then mixed with scallions, ginger, and garlic. It's undoubtedly my favorite cooking method.

This dish is not only simple to make but also incredibly flavorful, almost like it can satisfy your craving for "meat" in the world of vegetarian food.

Oyster mushrooms, as one of the commonly consumed fungi in our daily lives, actually have a rich culinary heritage. They have a thick, fleshy texture and a smooth and tender taste, making them suitable both as a standalone main ingredient and for cooking in combination with other ingredients.

Today, I want to introduce a special aspect of this recipe: I start by frying the oyster mushrooms in oil before adding the seasonings and simmering them together. This method creates mushrooms that are not only flavorful but also crispy in texture.


2.Tips for selecting oyster mushrooms:

When buying oyster mushrooms, look for ones that are evenly colored, with plump caps and no signs of damage or rot. Fresh oyster mushrooms like these have a delicious taste and higher nutritional value.


3.Handling oyster mushrooms:

When cleaning oyster mushrooms, start by trimming off the root ends and gently tear them into small pieces by hand. This helps preserve the shape and texture of the mushrooms. Rinse them thoroughly under running water to remove any dirt or debris residue.

Coat the oyster mushrooms with flour, salt, pepper, and water mixture until they are fully coated, then fry them in oil.


4.Tools needed:

You only need a regular frying pan, which is a commonly used tool in Chinese cooking for making stir-fried dishes. Food enthusiasts can easily find one at Asian supermarkets for regular use at home.


5.Tips for frying oyster mushrooms:

When frying oyster mushrooms, don't fry them all at once; fry them one batch at a time. The oil temperature should be around 170°C. At this temperature, you'll notice a slight smoke rising from the edges of the pan, and the oil will bubble gently in the center. When you stir them, you should hear a slight sizzle. Coat the mushrooms with batter or fry them directly until they set, then flip and fry the other side. Generally, frying shouldn't take too long, about 2 minutes per batch is usually sufficient.

  • 50g red bell pepper
  • 100g cornstarch

  • 5g ginger
  • 10g garlic
  • 5g salt
  • 3g ground pepper
  • 10g soy sauce (dark soy sauce)
  • 500g cooking oil

DIRECTIONS

STEP 1

Prepare and clean all ingredients thoroughly.

Tear the 250g of oyster mushrooms into small pieces by hand, squeezing out any excess water, and place them on a plate for later use.

Fry the mushrooms until both sides are golden brown, then remove them from the oil and drain excess oil.
