Mango pudding is one of the most popular desserts in Hong Kong, widely available in stores and beloved by children. The method of making mango pudding is simple, mainly using ingredients such as mango, sugar, milk, and sometimes condensed milk. It has a sweet and fragrant taste, with a rich mango flavor.
2. Choosing the Right Mango
Mango is an essential ingredient for making mango pudding, and there are no strict restrictions on the variety of mangoes you can use. It's best to use ripe mangoes for mango pudding. Ripe mangoes have a sweet fragrance and vibrant color, which are perfect for making mango pudding.
It's not recommended to use unripe mangoes because they can be sour, resulting in a tangy mango pudding. However, if you enjoy tangy flavors, you may consider using unripe mangoes!
3. How to Store Mango Pudding?
It's best to consume mango pudding fresh for the optimal taste and texture. If you have leftovers that you can't finish, you can store the remaining mango pudding in a sealed container in the refrigerator, where it can be kept for about 2 days.
You can also freeze mango pudding by wrapping it in plastic wrap and placing it in a sealed container. It can be stored in the freezer for up to 1 month. When you're ready to eat it, thaw the pudding at room temperature until it softens, then it's ready to be enjoyed!
4. What Goes Well with Mango Pudding
I enjoy eating mango pudding on its own because it has a sweet taste and provides a strong feeling of fullness, making it difficult for me to eat other foods afterwards.

The mango I'm using is a large green mango. It may look green, but it's actually ripe.

Soak the gelatin sheets in ice water until softened.
Tip:
It usually takes 5-10 minutes to soften.
STEP 3
Cut the mango into chunks.
STEP 4
Divide into two portions: one for blending and one for decoration.
STEP 5
Take one portion of the mango chunks and blend it into a puree using a blender.
STEP 6
Heat the milk with sugar until boiling.
Tip:
Stir continuously while heating to prevent the milk from scorching or sticking to the pot.
STEP 7
After boiling the milk, let it sit for one minute, then add the softened gelatin sheets.
STEP 8
Add the mango puree and stir until thoroughly combined.
Tip:
Keep stirring continuously until the mango puree, gelatin sheets, and milk are fully blended together.
STEP 9
After stirring thoroughly, strain the milk mixture to remove any impurities.
STEP 10
Pour the strained liquid into prepared cups. Refrigerate for about 2 hours.
Tip:
For a more aesthetic presentation, you can purchase specialized mango pudding molds. Alternatively, you can use small cups available at home as molds.

After refrigerating for two hours, remove from the refrigerator and top with mango cubes.
Tip:
The refrigeration time is not included in the preparation time.
