Mushrooms have long been recognized for their high nutritional value. Whether stir-fried, used in hot pots, or added to soups, people enjoy incorporating mushrooms into their meals. King Oyster mushrooms are particularly popular for their dual benefits in culinary and medicinal use. Today, I'll introduce a method to prepare King Oyster mushrooms in a fish-flavored style—a delicious and appetizing dish that pairs well with rice.

1.Regarding King Oyster Mushrooms:

King Oyster mushrooms belong to the Pleurotus genus, and they are the largest among them. The Pleurotus genus includes edible mushrooms with caps resembling oysters. Most Pleurotus mushrooms have large caps and short stems, growing in clusters. King Oyster mushrooms are notably distinct because of their large stems. They are a highly popular ingredient in Asian cuisine.

2.Ingredients Needed:

The main ingredients: This recipe primarily calls for King Oyster mushrooms, carrots, wood ear mushrooms, and green and red bell peppers. These ingredients are not only nutritious but also add vibrant colors to the dish.

Additional Seasonings:You'll also need Pixian doubanjiang (broad bean paste from Pixian), five-spice powder, light soy sauce, granulated sugar, dark soy sauce, cornstarch, and other seasonings.

The key ingredient for this recipe is doubanjiang (broad bean paste). Doubanjiang is a red-brown seasoning made primarily from broad beans, combined with chili peppers, salt, and other ingredients. It holds a significant place in Sichuan cuisine and is often regarded as the "soul of Sichuan cuisine." Pixian doubanjiang, in particular, is the most famous variety. You can typically find it in Asian supermarkets or online. If unavailable, you can substitute with another type of doubanjiang.

3.How to Slice King Oyster Mushrooms?

When stir-frying, they are typically sliced into thin strips. Trim off the ends slightly, slice them to the thickness of a coin, and then cut into strips. This method ensures they cook evenly and thoroughly, with uniform heat distribution.

4.How to Prepare Fish-flavored Sauce?

To prepare the sauce, you will need: five-spice powder, light soy sauce, granulated sugar, dark soy sauce, and cornstarch.

Prepare a small bowl and mix together 10g of five-spice powder, 15g of light soy sauce, 15g of granulated sugar, 10g of dark soy sauce, and 30g of cornstarch to create the fish-flavored sauce. The exact amounts of each seasoning depend on the quantity of ingredients used in the dish. By maintaining the right proportions, you can adjust the quantities accordingly.

5.Tools Needed:

A regular frying pan is generally sufficient. If you don't have one at home but enjoy cooking delicious food, consider purchasing one to easily create fresh and tasty dishes whenever you want.

With these tips in hand, I believe everyone can quickly make an authentic dish of Fish-flavored King Oyster Mushrooms. You can also adjust the seasoning quantities and incorporate additional ingredients according to your taste preferences. Next, let's get started together!
