When stir-frying, they are typically sliced into thin strips. Trim off the ends slightly, slice them to the thickness of a coin, and then cut into strips. This method ensures they cook evenly and thoroughly, with uniform heat distribution.
4.How to Prepare Fish-flavored Sauce?
To prepare the sauce, you will need: five-spice powder, light soy sauce, granulated sugar, dark soy sauce, and cornstarch.
Prepare a small bowl and mix together 10g of five-spice powder, 15g of light soy sauce, 15g of granulated sugar, 10g of dark soy sauce, and 30g of cornstarch to create the fish-flavored sauce. The exact amounts of each seasoning depend on the quantity of ingredients used in the dish. By maintaining the right proportions, you can adjust the quantities accordingly.
5.Tools Needed:

- 15g light soy sauce
- 30g cornstarch
- 15g granulated sugar
- 10g dark soy sauce
DIRECTIONS
STEP 1
Prepare the ingredients by washing them thoroughly. Soak the 30g of wood ear mushrooms for half an hour in advance. Prepare the sauce mixture (10g of five-spice powder, 15g of light soy sauce, 15g of granulated sugar, 10g of dark soy sauce, and 30g of cornstarch) and set it aside.
Tip:
Since I prepared the wood ear mushrooms in advance, this step is not included in the total preparation time.
STEP 2
Slice the wood ear mushrooms into thin strips. Also, slice the 50g of carrots, 100g of King Oyster mushrooms, and 20g of green and red bell peppers into thin strips.
STEP 3
Heat oil in a pan over high heat, then add 30g of Pixian doubanjiang (broad bean paste from Pixian) and stir-fry until the oil turns red.
STEP 4
Add the shredded carrots to the pan and stir-fry over high heat for three minutes.
STEP 5
Add the King Oyster mushrooms, stir-fry for two minutes, then cover and simmer for five minutes.
STEP 6
Next, add the wood ear mushrooms and the shredded green and red bell peppers. Stir-fry for three minutes.
STEP 7
Evenly pour the prepared sauce mixture over the ingredients. Stir well to coat everything, then cover and simmer for two minutes before serving.
