- 250g shrimp

- 2 tablespoons chopped scallions
- 4 tablespoons beer (for the batter, adjust the amount based on consistency)
- 4 tablespoons cornstarch
- 2 tablespoons flour

- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 tablespoon cooking wine
- Enough cooking oil (for frying)
DIRECTIONS
STEP 1
Prepare the shrimp:
Cut off the shrimp heads, peel the shrimp, then make a shallow cut on the back and remove the vein.

STEP 2
Marinate the shrimp:
Put the prepared shrimp in a bowl, add pepper, salt, and cooking wine, and mix well.
Let it marinate for 10 minutes.

STEP 3
Make the batter:
In a large bowl, mix cornstarch, flour, and chopped scallions.
Then slowly add the beer, stirring while adding, until the batter reaches a yogurt-like consistency.
Finally, drizzle in a circle of cooking oil and mix well.

STEP 4
Coat the shrimp:
Pour the batter over the marinated shrimp, mixing well to ensure each shrimp is evenly coated.

STEP 5
Fry the shrimp:
Pour enough cooking oil into the pan and heat it on high.
When you insert chopsticks into the oil and small bubbles form, turn the heat to medium-low.
Place the battered shrimp one by one into the oil and fry until golden and puffy.
Remove from oil.

Serve and season:
Take the fried shrimp out and drain the excess oil.
Sprinkle with chili powder and pepper salt to taste, and serve.
