About Salmon Curry

Salmon curry is a delicious dish that combines curry spices with seafood, originating from Southeast Asia.

The red curry block blends with cream to create a rich and hearty flavor, complemented by crunchy snow peas and the fresh acidity of lemon juice. This balances out the spiciness and richness of the curry, elevating the overall taste to perfection.

Tips for Selecting Salmon

1. Color: Choose bright orange-red or dark red and avoid dull colors.

2. Odor: It should have a faint ocean fragrance and avoid a fishy smell.

3. Elasticity: Press the fish meat with your fingers. The meat should be elastic and return to its original shape after being pressed.

4. Fish skin: The skin should be firm, smooth, and the scales should be intact.

5. Cut surface: The fresh cut surface should be moist and smooth. Avoid a dry or discolored surface.

INGREDIENTS

MAIN INGREDIENTS

  • 300g Salmon chunks

ACCESSORIES

  • 100g Snow peas
  • Half an onion
  • Half a fresh lemon (for juice)
  • 200ml Heavy cream (or coconut milk)
  • A few fresh basil leaves

SEASONINGS

  • 1 block of red curry (about 30g)
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce

STEP 2

Pan-fry the salmon:

Heat a pan over medium heat and add an appropriate amount of oil.

When the oil is about 50% hot, add the salmon chunks.

Pan-fry over medium heat until both sides are golden brown and the edges are slightly charred.

Then remove and set aside.

STEP 3

Cook the curry base:

No need to wash the pan, just use the leftover oil from frying the fish.

Add the chopped onion and red curry block. Stir-fry over low heat until the curry block completely melts.

Pour in the heavy cream (or coconut milk) and increase the heat to high, stirring constantly to prevent sticking.

STEP 4

Combine the ingredients:

Once the curry base starts to boil, add the snow peas and cook for about 2 minutes to keep them crispy.

Then add the previously pan-fried salmon chunks, gently stir to coat each piece of fish with the curry sauce.

Add the fish sauce and soy sauce to adjust the flavor, and adjust to your taste.

STEP 5

Season and reduce the sauce:

Finally, squeeze in fresh lemon juice. The acidity of the lemon will balance out the spiciness and richness of the curry.

Continue to cook until the sauce thickens slightly, but don’t reduce it too much. Keep it a bit runny so the curry remains delicious.

STEP 6

Plate and garnish:

Serve the cooked salmon curry on a plate.

Top with a few fresh basil leaves as decoration, adding color and fragrance.

Are there other ways to cook salmon?

1.Steamed Salmon

Steaming is one of the best methods to retain the natural flavor of the ingredients.

After cleaning the salmon, marinate it briefly with cooking wine and ginger to remove any fishy smell, then steam until cooked. Serve with soy sauce and mustard for added flavor.

2.Pan-Seared Salmon

Pan-seared salmon has a crispy outer layer while remaining tender inside.

Marinate the salmon with salt, black pepper, and lemon juice, then cook in a little olive oil in a pan over medium heat until both sides are golden brown. You can also serve it with lemon slices and vegetables.

3.Braised Salmon

Braised salmon is a flavorful and aromatic dish.

Marinate the salmon with salt and cooking wine, then pan-fry with garlic, ginger, and scallions. Add soy sauce, sugar, and water, then simmer on low heat until the sauce thickens.

4.Mustard Salmon

Mix soy sauce and mustard, then add minced garlic, small chili peppers, lemon slices, onions, and cilantro.

This mixture can be served as a dip with raw salmon slices, offering a fresh and tangy flavor.

5.Salmon Fried Rice

Salmon fried rice is simple to make and very nutritious.

Cut the salmon into small cubes and marinate with salt and black pepper. Then stir-fry rice in a pan, adding the salmon cubes and vegetables. Finish by sprinkling green onions for extra fragrance.

6.Baked Salmon

After marinating, place the salmon in a preheated oven and bake until the surface is golden and fully cooked. You can brush olive oil, honey, or spices on the salmon before baking to enhance the flavor.

7.Salmon Sushi

Slice the salmon thinly and prepare a sheet of nori. Spread rice on the nori, add salmon, cucumber, and carrot strips, roll it up, and slice into pieces. This makes a delicious and exotic-tasting sushi roll.
