- Half a fresh lemon (for juice)
- 200ml Heavy cream (or coconut milk)

- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
DIRECTIONS
STEP 1
Prepare the ingredients:
Finely chop the onion. Cut the snow peas into sections.Peel and cut the salmon into chunks.

STEP 2
Pan-fry the salmon:
Heat a pan over medium heat and add an appropriate amount of oil.
When the oil is about 50% hot, add the salmon chunks.
Pan-fry over medium heat until both sides are golden brown and the edges are slightly charred.
Then remove and set aside.

STEP 3
Cook the curry base:
No need to wash the pan, just use the leftover oil from frying the fish.
Add the chopped onion and red curry block. Stir-fry over low heat until the curry block completely melts.
Pour in the heavy cream (or coconut milk) and increase the heat to high, stirring constantly to prevent sticking.

STEP 4
Combine the ingredients:
Once the curry base starts to boil, add the snow peas and cook for about 2 minutes to keep them crispy.
Then add the previously pan-fried salmon chunks, gently stir to coat each piece of fish with the curry sauce.
Add the fish sauce and soy sauce to adjust the flavor, and adjust to your taste.

STEP 5
Season and reduce the sauce:
Finally, squeeze in fresh lemon juice. The acidity of the lemon will balance out the spiciness and richness of the curry.
Continue to cook until the sauce thickens slightly, but don’t reduce it too much. Keep it a bit runny so the curry remains delicious.
