If you want to make a vegetarian version, you can remove the cod and use vegetable ingredients such as shiitake mushrooms and tofu instead.

  • 200g cod fish fillets
  • 3 eggs

  • 1 scallion (sliced into thin strips)

SEASONINGS

  • 1/4 teaspoon white pepper
  • 1 tablespoon Huadiao wine
  • 1/2 teaspoon salt (for egg mixture)
  • 1 tablespoon steamed fish soy sauce
  • Appropriate amount of cooking oil (for pouring hot oil)

DIRECTIONS

STEP 1

Marinate the cod fillets with a little white pepper and Huadiao wine for 20 minutes to remove the fishy smell and enhance the fragrance.

Crack the 3 eggs into a bowl, add 1/2 teaspoon salt, and 60-75 ml of warm water (about 1.5 times the volume of the eggs). Mix well.

Add enough water to the steamer, bring to a boil over high heat. Once boiling, cover the egg mixture with plastic wrap or a lid, and place the dish in the steamer. Steam over medium-low heat for 6 minutes.

After 6 minutes, gently place the marinated cod fillets on top and continue steaming for 5 more minutes. Turn off the heat and let it rest for 3 minutes.

Remove the steamed cod fish egg custard, sprinkle with sliced scallions, and drizzle with hot oil to bring out the fragrance of the scallions.
