Rice noodles are a delicious and healthy food worth exploring and savoring. I hope the following recipe can provide you with useful information and inspiration, deepening your appreciation and enjoyment of rice noodles, and encouraging you to try Beef Chow Fun.

1.Regarding Beef Chow Fun:

Beef Chow Fun originated in the Guangdong region and is particularly popular in southern China. In Guangdong, this dish is known as "Ngau Hor," where "Ngau" refers to beef and "Hor" refers to flat rice noodles. Flat rice noodles, also known as Shahe Fen, originate from Shahe Town in Guangzhou. The main ingredients for Beef Chow Fun include bean sprouts, flat rice noodles, and beef. Cooking Beef Chow Fun requires precise control over heat and oil to ensure each strand of noodle is fragrant yet non-sticky, the beef is tender, and the bean sprouts remain crisp and refreshing.

2.How to slice beef:

Beef has coarse muscle fibers and dense connective tissue, so it's best to slice against the grain to shorten the long muscle fibers. Avoid cutting parallel to the muscle fibers as this can result in tough and less flavorful meat that's difficult to chew. First, identify the direction of the muscle fibers, then slice the meat perpendicular to these fibers. The sliced beef should have a "crosshatch" pattern, which helps to tenderize the meat and improve its flavor absorption.

3.Choosing rice noodles:

Chinese rice noodles come in various shapes and forms. For an authentic Beef Chow Fun, you should choose flat rice noodles.

Rice noodles, or "ho fun," are made by washing rice, grinding it into flour, mixing it with water to form a batter, steaming it into thin sheets in a steamer, cooling, and then cutting it into wide, flat strips. They are typically available for purchase at Asian supermarkets or online.

4.Main seasoning sauce:

Dark soy sauce: It adds a salty flavor and imparts a distinctive sauce aroma, significantly enhancing the fragrance of the dish. It also adds color, making the cooked food more visually appealing.

Light soy sauce: It is another type of soy sauce primarily used for seasoning to enhance the flavor of food, adding a savory taste to dishes.

5.About bean sprouts:

Choose fresh and healthy bean sprouts that have a mild bean aroma and are moist. When handling bean sprouts, wash them thoroughly after selecting good quality ones, and they are ready to use.

I don’t have a high-temperature wok. Can I use a regular frying pan?

Yes, you can, but a high-temperature wok cooks the ingredients more quickly. A regular pan may take longer.

I don't have wide rice noodles, can I use round ones? Does the substitution require any changes to the cooking time?
