Why I Love This Recipe

Crispy Outer Layer and Soft Interior: The hot air circulation in the air fryer makes the outer crust of the bread crispy while keeping the inside soft.

Rich Milk Flavor: The addition of warm milk and corn oil makes the bread emit a strong milk fragrance.

Healthy and Low - Fat: Compared to a traditional oven, the air fryer uses less oil, making it healthier.

Necessary Tools

1. Air fryer: Used to bake the bread.

2. Baking paper: Laid in the air fryer basket to prevent the dough from sticking and for easy cleaning.

3. Stirring tool: Such as chopsticks or a spoon, used to stir evenly when adding each ingredient.

4. Plastic wrap: Cover the dough to prevent it from drying out during fermentation.

5. Cutting board: Used for kneading and shaping the dough.

6. Scraper: Helps to take the dough out of the bowl, as well as divide and smooth the dough.

7. Spray bottle (optional): Used to spray a small amount of corn oil on the baking paper to prevent sticking.

8. Pastry brush: Used to brush the whole egg liquid on the surface of the dough for even coloring during baking.

9. Cooling rack: Used to let the bread cool slightly after taking it out of the air fryer to prevent the bottom from becoming soggy.

INGREDIENTS

MAIN INGREDIENTS

  • 260g bread flour
  • 40g whole egg liquid (about one egg)
  • 155ml warm milk (about 35 - 40°C)

ACCESSORIES

  • 4g yeast (about 1/2 teaspoon)
  • white sesame seeds (for decoration)

SEASONINGS

  • 25g white sugar
  • 40ml corn oil
  • 2g salt (about 1/4 teaspoon)

DIRECTIONS

STEP 1

Prepare the dough:

In a large bowl, add 40g of whole egg liquid, 25g of white sugar, 4g of yeast, 155ml of warm milk (note that the temperature of the milk should not be too high to avoid killing the yeast), 40ml of corn oil, 2g of salt, and 260g of bread flour in sequence. Stir well after adding each ingredient until all are mixed into a dough.

Tip: If the dough is too dry, you can add a small amount of warm milk appropriately; if it is too sticky, add a small amount of flour.

Prepare the dough

STEP 2

Dough fermentation:

Sprinkle some dry flour on the cutting board, take out the dough and knead it for a while.

Since the dough is relatively soft, scrape it up with a spatula and then knead it a few more times to smooth the dough.

Put the dough into a bowl, cover it with plastic wrap, and place it in a warm place for the first fermentation until the dough doubles in size (about 1 - 1.5 hours).

Tip: Temperature is very important during fermentation. 25 - 30°C is the ideal fermentation temperature. If the room temperature is low, you can put the bowl in a microwave oven or oven and place a cup of hot water beside it to help with fermentation.

Dough fermentation

STEP 3

Divide the dough:

Take out the fermented dough, press it to remove air, and then divide it into 12 equal parts with a spatula or a bench knife.

Knead each piece of dough into a smooth small ball and let it rest on the cutting board for 10 minutes.

Tip: Letting the dough rest makes it easier to shape and avoids shrinking.

Divide the dough

STEP 4

Second fermentation:

Take out the air fryer basket, lay a layer of baking paper, and spray a small amount of corn oil to prevent sticking.

Arrange the small dough balls evenly on the baking paper, leaving some space between each dough ball because the dough will expand during fermentation.

Put the air fryer basket back into the air fryer, set the temperature to 40°C, and conduct the second fermentation for about 30 - 40 minutes until the dough expands to 1.5 times its original size.

Tip: The second fermentation can make the bread softer. Don't skip this step.

Second fermentation

STEP 5

Baking:

Brush a thin layer of whole egg liquid on the surface of the fermented dough and then sprinkle an appropriate amount of white sesame seeds.

Preheat the air fryer to 140°C, then put the air fryer basket in, set the temperature to 140°C, and bake for 20 minutes.

After 20 minutes, take it out, turn the bread over, set the temperature to 130°C, and continue to bake for 15 minutes until the surface of the bread turns golden brown.

Tip: Turning the bread over is to ensure even baking on both sides. If the bread colors too quickly, you can appropriately lower the temperature or shorten the baking time.

STEP 6

Taking out of the oven and enjoying:

Take out the baked milk mini breads, place them on a cooling rack, and let them cool slightly before enjoying.

Tip: The bread is very soft when it just comes out of the oven. It will set better after cooling and the taste will be better.

Common Mistakes to Avoid

1. Uneven Dough Mixing

Symptom: There are dry powder or lumps in the dough, affecting fermentation and taste.

Solution: After adding each ingredient, stir thoroughly to ensure there is no residual dry powder. Knead the dough until it is smooth and elastic.

2. Excessively High Milk Temperature

Symptom: The yeast is killed by the hot milk, resulting in poor dough fermentation.

Solution: The temperature of warm milk should be controlled between 35 - 40°C. You can just feel it warm when touching it with your hand, avoiding overheating.

3. Improper Fermentation Temperature and Time

Symptom: Under - fermentation or over - fermentation occurs, resulting in small - sized bread with poor taste.

Solution: During the first fermentation, ensure the temperature is between 25 - 30°C until the dough doubles in size. During the second fermentation, set the temperature to 40°C until the dough expands to 1.5 times its original size. Pay attention to observing the volume change of the dough and avoid too long or too short fermentation time.

4. Neglecting the Resting Step

Symptom: The dough shrinks back during shaping, affecting the shape of the bread.

Solution: After dividing the dough, let it rest for 10 minutes to relax the gluten, which is convenient for subsequent shaping.

5. Insufficient Preheating of the Air Fryer

Symptom: The surface of the bread is not easily colored, and the baking time is prolonged.

Solution: Before baking, make sure the air fryer is preheated to the set temperature (140°C) to ensure the baking effect.

6. Improper Baking Temperature and Time

Symptom: The surface of the bread is burnt or the inside is undercooked.

Solution: Set the temperature and time strictly according to the recipe. Bake at 140°C for 20 minutes for the first time, and then bake at 130°C for 15 minutes after turning it over. If the bread colors too quickly, you can appropriately lower the temperature or shorten the time.

7. Neglecting the Turning - over Step

Symptom: The two sides of the bread are not evenly heated, resulting in different colors and tastes.

Solution: Remember to turn the bread over after baking for 20 minutes to ensure even coloring on both sides.

Consumption Suggestions

1. Best Consumption Time

Enjoy while it's warm: When the bread just comes out of the oven, the outer crust is crispy, the inside is soft, and the milk fragrance is strong, presenting the best taste. It is recommended to eat it after it has cooled slightly until it's not scalding.

Consume at room temperature: If you eat the cooled bread, you can pair it with a cup of hot milk, hot tea, or coffee to add a warm taste.

2. Pairing Suggestions

Breakfast pairing: Pair the milk mini bread with a fried egg, bacon, milk, or yogurt. It is nutritious and suitable for a busy morning.

Afternoon tea snacks: Pair it with fruits, nuts, or jams as an afternoon tea snack to enjoy a relaxing time.

Beverage pairing: Whether it's a hot or cold drink, it can perfectly pair with the milk mini bread. Hot milk, black tea, coffee, or fruit juice are all good choices.

3. Creative Ways of Eating

Sandwich: Cut the bread and sandwich it with ham, lettuce, tomato, fried egg, or salad dressing to make mini sandwiches.

Pair with jam or cream: Spread a layer of jam or cream on the surface of the bread to add flavor.

Pair with sweet - and - spicy sauce: If you like the sweet - and - salty taste, spread sweet - and - spicy sauce or ketchup on the bread for a unique flavor.

Storage Suggestions

If you can't finish the bread at once, you can put it in a sealed bag and store it at room temperature for 2 days, or put it in the freezer (it can be stored for 1 - 2 weeks).

For frozen bread, take it out and let it return to room temperature in advance. Heat it with an oven or air fryer. It is recommended to bake it at 130°C for 5 - 8 minutes to restore the crispy texture.
