Young lotus roots is the tender part of lotus root, which is crunchy, sweet and full of water. It is rich in vitamin C, dietary fiber, and other nutrients that improve digestion and strengthen the immune system. In recipes, Young lotus roots can be served cold, stir-fried or pickled. Cold Young lotus roots are hot and sour. However, it should be noted that the tips of the roots are prone to oxidation and discoloration, so add a little white vinegar when cooking or preserving.
