Lotus root

Lotus root is a common tuber of aquatic plants, rich in protein, carbohydrates, vitamins B and C, as well as minerals such as potassium and iron. Lotus root is known for its heat-clearing, detoxifying, spleen-strengthening, and appetizing properties. In cooking, lotus root can be stir-fried, boiled, stewed, or used in soups. Popular dishes include stir-fried lotus root slices with shredded pork, lotus root soup, and lotus root sandwich. When consuming lotus root, it is advisable to choose smooth, undamaged ones and peel the skin before slicing. Despite being nutritious, lotus root is high in starch, so individuals with diabetes should consume it in moderation.
