DIRECTIONS
STEP 1
In a bowl, mix together 1 egg, 170g milk, 2g salt, 10g sugar, and 3g yeast until well combined.
STEP 2
Add 250g bread flour, 15g black sesame, and 30g raisins. Mix everything together until it forms a dough.
STEP 3
Let it rest for 15 minutes.
- You can fold the dough a few times during this time.
- Let the dough rise until it doubles in size.
STEP 4
Sprinkle some flour on the countertop, place the dough on it, and gently press it to release the air.
- Roll it into a flat disc with the rolling pin.
STEP 5
Fold the dough like a blanket and seal the edges tightly.
- Flip it over and shape it nicely.
STEP 6
Place the dough into the air fryer and let it rise to 1.5 times its size. This will take about 1.5 to 2.5 hours.
- Sprinkle some flour on top, lightly smooth it with your hands, and make a few slashes on top.

2. Flour:
For the best flavor and chew, I highly recommend using bread flour. You can substitute all-purpose flour at a 1:1 ratio without changing the recipe.
I don’t recommend using whole wheat flour in this dough, but if necessary, use half bread flour and half whole wheat flour. The bread will have a denser texture.
3. Yeast:
You can use either instant yeast or active dry yeast, but I highly recommend instant yeast (also called "rapid-rise" or "quick-rise" yeast). It makes the bread rise faster.
4. Dough Fermentation:
The fermentation time depends on factors like room temperature, humidity, and the flour used. It’s fine if the fermentation is a bit faster or slower—just aim to double the dough’s size, with the surface bubbling and the texture being light and airy.
If your kitchen is cooler (22°C/70°F or lower) or the yeast isn't activating (check after 1 hour), place the bowl in a warmer spot. Yeast loves warmth!
