- 1 tablespoon vegetarian oyster sauce
- 1/2 teaspoon salt
- 1 tablespoon cornstarch (to thicken the sauce)
- 1/2 cup water
- Plant oil (to taste)
DIRECTIONS
STEP 1
Prepare a sauce:
Add 1 tablespoon of light soy sauce, 1 tablespoon of vegetarian oyster sauce, 1/2 teaspoon of salt, 1 tablespoon of cornstarch, and 1/2 cup of water to a bowl. Mix well and set aside.

STEP 2
Blanch the Bok Choy:
Wash the bok choy.
Boil water in a pot, and once boiling, cook the bok choy for 30 seconds, then remove and set aside.

STEP 3
Blanch the shiitake mushrooms:
Clean and chop the shiitake mushrooms. Boil them in water for 7-8 minutes until soft, then remove and set aside.

STEP 4
Sauté garlic and green onions:
Add an appropriate amount of cooking oil to the pot. When the oil is hot, pour in the minced garlic and green onions and sauté over low heat until fragrant.

STEP 5
Stir-fry the ingredients:
Add the blanched Bok Choy and shiitake mushrooms to the pot and stir-fry quickly over high heat to let the excess moisture evaporate.

STEP 6
Add the sauce:
Pour the prepared sauce into the pot and stir-fry quickly to mix well.

STEP 7
Finish:
Stir-fry until the sauce thickens and the ingredients are evenly coated with the sauce. Then remove from the pot and plate.
