  • 12 jujube
  • 20 goji berries

SEASONINGS

  • 4 slices of fresh ginger
  • 0.5 tablespoon of salt
  • 2 stalks of green onion

DIRECTIONS

STEP 1

Prepare your ingredients. Cut the mature hen into large pieces and wash thoroughly.

Tips:

① To prevent excess fat, try to remove the fatty parts of the chicken as much as possible.

② Discard unnecessary parts of the chicken, including red offal such as the liver, lungs, and heart. Clip off the nails on the chicken's feet; remove the beak area located between the upper part of the mouth and eyes, as well as the chicken's rear end.

③ Thoroughly clean the mature hen, making sure to remove blood and impurities, resulting in a clearer soup.


STEP 2

Slice the ginger and cut the scallions into sections. Clean the cordyceps flowers, jujube, and goji berries thoroughly and set them aside for later use.
