Choosing and preparing ingredients are key factors in creating a successful dish. This is especially true for Chinese-style potato pancakes. To make the pancake fits your palate, you need to acquire the following helpful tips:
1.How to choose potatoes?
When choosing potatoes, the first thing to look for is a smooth skin surface without any signs of insect damage, green spots, blackened areas, or sprouting. The texture should feel firm and hard, not soft or soggy - as these are usually fresher. Also, potatoes from different places and of different varieties may have varying tastes and textures. Choose according to your own preferences and experience. Generally speaking, if you prefer a crunchy texture, choose potatoes with lighter skin color as they contain less starch and will be crunchier; if you prefer a stickier texture, go for those with darker skin as they are richer in starch.
2.Do the shredded potatoes need to be soaked in water?
Whether you should soak your shredded potatoes in clear water actually depends on your individual preferences and the type of potato you have. If you enjoy a more crunchy texture and have bought potatoes that are high in starch, you might consider soaking them in water. This can help remove excess starch, resulting in crisper potato shreds. However, please be aware that after soaking, you need to drain the water from the potato shreds and then add some starch or flour. If the potatoes you've bought are low in starch, there's no need to soak them in water. You simply need to add a small amount of starch or flour to prevent the potato shreds from falling apart.

INGREDIENTS
MAIN INGREDIENTS
- 3 medium-sized potatoes (approximately 12.34 oz / 350g)
ACCESSORIES
- 1.59 oz (45g) flour
- 1 egg
SEASONINGS
- 0.71 oz (20g) green onions
- 1/2 teaspoon of salt
- a bit of vegetable oil
DIRECTIONS
STEP 1
Prepare 45g of flour, 3 medium-sized potatoes that have been peeled and washed, and 20g of cleaned green onions.
STEP 2
Chop the green onions into small pieces for later use.
STEP 3
Grate the potatoes into fine threads, and place them in a bowl.
Tips:
1)The finer the potato threads, the better the taste. If you don't have a grater, you can use a knife to cut the potatoes into threads, but make sure they are uniform.
2)If the potato threads need to be soaked in water, please drain them.
STEP 4
Add the prepared flour and green onions.
STEP 5
Add 1/2 teaspoon of salt and a small amount of cooking oil, stir until it's well mixed.
Tips:
You can add some pepper or chili powder according to your taste for different flavors.
STEP 6
Next, add an egg and stir until well blended.
Tips:
1)Adding an egg enhances the stickiness and texture between the potato threads, making it more nutritious.
2)If you prefer a crisper texture, you may skip the egg.
STEP 7
After stirring, let it sit for 3-5 minutes.
Tips:
Don’t let it sit too long, as it may affect the taste.
STEP 8
Preheat a flat pan or electric baker, brush a little cooking oil, and hand press the potato threads into a pancake shape into the pan.
Tips:
1)You can use tools such as a spatula or scraper to help press the potato threads into a pancake shape.
2)The thinner the pancake, the easier it is to cook and the crisper it will be.
STEP 9
Slowly pan-fry over medium-low heat, flipping it after one side has set, until both sides are golden brown.
Tips:
1)Be mindful of the frying time; if it's fried too long, the potato pancake will harden. After about 2 minutes of frying one side, flip it and repeat until it's golden brown.
2)When frying the potato pancake, you can gently press it with a spatula to make the potato threads more compact.
STEP 10
Take out the pancake and plate it. According to your taste, you can sprinkle some pepper salt or ketchup on it before serving.
